For quite a while now I have understood that while being severely over geared for the normal 5-man HCs you hardly gain anything from upgrading your tanking gear, I mean either you can tank it or you can't, there is a point when you are... let's call it gear capped. So that is why I tried out a 2H ret tanking spec which turned out pretty poor, I survived just fine but the dps was not higher than when tanking in prot, losing all the return damage skills and such.

So well my new thing is to switch out some gear to dps or pvp gear, I already switched one trinket [Ick's Rotting Thumb] trinket to [Battlemaster's Rage] and one ring [Mark of the Relentless] to [Bloodshed Band]. I next plan to switch my amulet [Shard of the Crystal Forest] to [Wrathful Gladiator's Pendant of Triumph], for more serious tanking purposes I guess I should get [Fossilized Ammonite Choker].

I want to switch my weapon also to some 1h dps weapon, quite a lot to chose from but which one is best?

And for many items there is the option of getting a spell damage item instead, would that work better than AP like in the amulet?

Absolute best thing to do if you find yourself over geared is to start trading out pieces for HEALING pieces.  Almost all mana returns now days are based on % of maximum mana so increase your pool and you increase yout regen and in turn your ability to keep spammin those really epensive spells *cough* consecrate *cough*.
